Favorite Fish Recipes

Poor Man’s Lobster

 

Halibut cut into 1” by 2” chunks

1/4  cup salt

1/3 cup sugar

 

Mix salt and sugar into pan with 2 quarts of water, bring to a boil. Add Halibut chunks, allow t o boil until halibut turns white and floats to the top.  Melt butter, add some garlic powder.  Dunk your Halibut in the garlic butter and enjoy!  (For Ling Cod add 1 TBS white vinegar along with salt and sugar, to the water.)

Berry Nut Halibut

 

In 8” by 8” baking dish, layer Halibut fillets about 3/4” inch thick.  Cut fillets to fill any gaps. 

1/3 cup Whole Cashews (or macadamia nuts will work also)

1/3 cup Craisins (cranberry raisins)

 

Crush Cashews, fine chop Craisins.  Sprinkle over top of fish. Make about 1/3 Cup Hollandaise sauce (we use McCormick powder packages). Pour Hollandaise sauce over fish.  Sprinkle paprika on top. Bake at 350 for about 25 to 30 minutes depending on fillet thickness

Italian Rockfish or Halibut

 

Lay Rockfish or Halibut fillets on microwave safe plate.  Marinate top and bottom with 1/4 cup Italian salad dressing for 20 minutes.  Sprinkle with Garlic powder and fresh ground black pepper to taste.  Microwave at high power about 3 minutes, pour off

about half the juice.  Microwave another 2-3 minutes until fish is white and flaky.  Do Not over cook.  You can also bake at 350 for 20-30 minutes until fish is white and flaky.

 

Blackened Fish Tacos

 

If you have blackened halibut or rockfish leftovers heat with a little taco seasoning and your normal taco ingredients for a  quick and tasty meal.
